

Tabbouleh salad is one of those refreshing dishes that instantly invigorates any meal. I don't usually have bulgur wheat at hand so I substitute couscous. Either way, I eat multiple bowlfuls of this stuff by itself.
TABBOULEH SALAD WITH COUSCOUS
1 cup cooked couscous
¼ cup olive oil
¼ cup lemon juice (1 or 2 lemons,
depending on size)
3 cups roma tomatoes, chopped
½ English cucumber, chopped (about
1 cup)
½ cup green onions, chopped (about
7 green onions)
1 cup fresh parsley, chopped
1 cup fresh mint, chopped
salt and pepper to taste
1. Mix lemon juice, olive oil and salt and pepper in a small bowl.
2. In a large bowl place couscous, tomatoes, cucumber, green onions, parsley and mint.
3. Pour lemon dressing over the greens mixture and toss well.
