Parmesan Turkey Meatballs

These meatballs are crunchy on the outside and moist on the inside and packed full with flavor. Because I like to use lean ground turkey (95% fat free), the meatballs are in danger of being dry - thus, enter the minced onion, which gives each ball its moistness and bold flavor.  Here, I've paired it with my Easiest Spaghetti Sauce. I transferred the meatballs to a plate once done, kept the brown bits from pan and used the same pan to roast my grape tomatoes.  Never ever throw away those precious brown bits!  

Parmesan Turkey Meatballs


1 lb lean ground turkey
3/4 cup grated parmesan cheese
1/2 cup minced yellow onion 
2 tsp oregano
salt and pepper to taste
3 tbsp olive oil

1. Mix well all ingredients in a large bowl. Shape into balls of 1 - 1 1/2 inch in diameter.
2. Heat olive oil in skillet to medium high.
3. Brown meatballs on all sides.  Lower heat to medium then cover for about seven minutes until cooked.
4. Serve with favorite red sauce and enjoy!
